I have been properly burning Saturn ISOs, I have a Saturn and use the "swap disc" method. So far Darius Gaiden is the only one that works. Panzer Dragoon freezes on the first loading screen, Albert Odyssey doesn't even appear on screen, Batman Forever doesn't appear on screen either.
Is there a particular reason why these certain ISOs will not work? Could it be that I have burned them at 16x, or are they just bad rips? Is there a list somewhere that indicated working ISOs from certain sources?

The best program to burn saturn iso's is diskjuggler.
you have to burn at the lowest setting or the disks will not work properly. That might be the reason why your disks have errors, try a low setting to burn your disks

I just noticed that Batman Forever (the burnt CD I did) actually plays on the SSF emulator when I pop the CD in my PC drive, but when I pop it in my actual Saturn it won't even load. This is probably something to do with the burn speed of 16x im thinking. I wil definitely donwload that program.

I had same problem with few games too, then I found the cue filese were wrong
Some games dont work when using swaptrick because they read the protection twice. You have to repeat the swaptrick after the first "regular" swaptrick, thats all. Wipeout and Discworld II require this for example.
