Zelda LTTP, Final Fantasy IV, Super Mario Bros 3, Sonic 2, Mega Man 2, Faxanadu and believe it or not Ninja Gaiden 1,2 and 3. I've played them so much I could probably do it in my sleep.

Great topic. For me, it's:
Shenmue - I don't know how many hours I've spent training up moves, trying to talk to every NPC at every point in the game, or simply walking around Dobuita and Yokosuka Harbor, I always seem to come across something new every time I play it. And to date, Shenmue is the only video game that's ever made me forget I was actually playing a video game. Not sure if that's a good thing or not.
Wave Race 64 - Sometimes I'll buckle down and try to beat old records (in which it's not at all relaxing) but for just cruising around the courses like I do most of the time, it's fantastic. The physics really do add a layer to this game that no other water-based racing game has ever come close to replicating.
Elder Scrolls III: Morrowind - My "forever" game. I don't think I'll ever see and do everything the game has to offer but it's fun just to wind down and complete quests at my leisure.
Ridge Racer series - There's something about unrealistically whipping around corners in the company of vibrant cityscapes, obnoxious announcers, and blaring electronica music that keeps me from being nearly as bored of these games as I probably should be. R4: Ridge Racer Type 4, Rage Racer, RRV, Ridge Racer (PSP), and RR64 always have me coming back.
Tennis 2K2 - After winning every match, maxing out player stats, and unlocking everything there is to unlock, you'd think that you could just put the racket down. This game always has me inexplicably coming back, though.
Lumines - Maybe it's the music but Lumines is one of the most mesmerizing puzzle games I've ever played. It's way too easy to kill an hour or two without even realizing it. Overall, it's a very calming game that works great as a relaxant.
The 2D Sonic games are some of my favorite games ever but they just move too fast to be "comfort" games for me. Now, if they made an entire game out of Sonic 1's rotating special stages, that'd be a different story entirely...

Quake III - I put so many hours into this game when I was in high school, it's like my old friend. Unfortunately, I stopped when I started college, and my skill level seems to have dropped considerably since then. Go figure I guess

Street Fighter Alpha 3- I play it with my brother on dramatic battle mode.2 against 1 FTW!
Rockband 1/2-Really fun on guitar & bass.
Final Fight & other beat 'em ups-You just beat up everything in your way,now that's fun.
Sonic & knuckles-Fun and it has great levels.Sonic 2 is great too.

NES: mario bros: the simplicity is just so calming
master system: fantasy zone: i suck at it, but the music cheers me up
mega drive: sonic 2 - my favourite game as a child
SNES: Starwing/starfox - probably my favourite game of the 16 bit generation
basically everything else boils down to smash bros. you cant lose with smash bros

Oh! I forgot to mention those. Especially the 1st two. I haven't played them so much lately, but I got to where I could beat them in one life. I think I shaved my time down to about 30 minutes to pass Ninja Gaiden 1. They were my favorite games when I was younger.
