Of the more easily-accessible versions of the first Ys, which would you recommend to a novice?

I've never played a Ys game, but have been aware of it and vaguely interested for a long time.

Ys Chronicle 1 & II on the PC are a great place to start and are usually dirt cheap when they are on sale. They are beautiful remakes of the first two games and smooth out some rough edges. I will not be covering those until part 2 of my spotlight but have no problem recommending them.
