If you say the original 3 on snes are better.. You are mad. Beating those for the first time a few years ago and it is a aaaaallll nostalgia for folks. Bad hit boxes, floaty controls and hodge podge level design.
I'm speaking only of DKC 2, cream of the crop platformer. The level design is very much on point throughout the entire game.

So...is there like a good port of a Souls game, or a dark RPG or something like that? Or survival horror? Anything in that vein?

The Dark Souls port is fantastic. There's also Salt and Sanctuary (physical version available),

Dark Souls, yes.

There's Resident Evil Revelations 1 & 2. And 1, 4, and 0 have been announced as well.

Not quite sure what you're looking for with "dark RPG," though. There's a ton of those old Infinity Engine RPG's porting to Switch soon, though.
