I don't understand the subtitles of KH games. Are there ultimately more than just the two games in various forms?

According to Wikipedia, there are seven titles, and then a bunch of rereleases and compilations.

Wow I had no idea. I thought they were all rereleases. Shows my interest level I guess haha.

Clearly, the order in which these games should be played is clear and obvious, and which games are mainline entries in the series and which are spin-offs is equally obvious.

Of course, they made it easy to follow at the time by releasing different entries in the series respectively on the PS2, GBA, PSP, DS, 3DS, various mobile phones and modern consoles. Obviously everyone has access to all of those systems who is into the series, so they would definitely have played every entry,

you actually reminded me - I feel like back in the day I remember some box set that contained two PS2 entries, and a GBA entry, which seemed super weird to me to see Sony games bundled with a Nintendo game.

Am I making this memory up?

Maybe? It's possible it wasn't actually the GBA game though. The GBA game was called Chain of Memories, but they actually did a PS2 remake of it called Re: Chain of Memories, so it's possible that's what confused you?

Then again, this series is weird, so I wouldn't be surprised if a special edition collection fo the first 3 games was available somewhere.

no, no - in my mind I feel like it was a box that I remember literally seeing PS2 games AND a GBA cartridge in it. Like, maybe it was something sold exclusively through the Square Enix shop or something. Hmm.
