I agree with just about everything you posted. The only 2 things I disagree with are:

1) Mario 64 is only good, not incredible.

2) Castlevania 1 is easy, I half agree with this, for me Castlevania 1 is easy, Contra is easy, double dragon 3 is easy, but thats only because I have played these games so many times in my life that they are ingrained in my head, as Castlevania 1 is ingrained in yours, but watch someone play it for the first time and I think you will see how challenging it is for people who did not grow up on it.

I also am not sure that classic castlevania is better than metroidvania is an unpopular opinion. I do love the metroidvanias but I think there are tons of people like us who would love nothing more than a classic castlevania game. My dream game is a Super Castlevania 5, A game that has all the mechanics of 4 but with all new levels and modernized graphics, keep most of the soundtrack though, 4 has some of my all time favorite game songs.
I know I'm late to respond, but I can agree with that Super Castlevania 5 idea, I would be the equivalent of most peoples Half Life 3 crazy if that happen.

I can see where you are coming from with my CV comment, I actually still struggle with Contra, without the 30 lives code at least, probably because I did not play it til later in life. I feel as if Contra is 100x harder than CV 1 haha, as you say experience has alot to do with it.

I really don't watch Twitch anymore. I honestly feel it's mostly shit now. For once not anything a company did because they changed a thing but what it's become as a whole. When it started out it was really neat. Just some dude with a bad camera if at all playing this game he or she really loved and wanted to show people and had a real passion for it. The chats were about the game. Then at some point, it became a business for who streams on it. I used to find all sorts of games being streamed. Now it just seems like another 20 something with their racing car chair and logos and animations (and sometimes a bunch of cleavage for cheap views) to donate to them when they already seem to have a lot of money and they play just the most commercial games or some shitty Steam game to scream like an idiot. The chats as kissing ass and never about the game but a bunch of toxic crap. The people seem so manufactured and so does what they play. They remind me of the scene in Waynes World where they are wearing Rebbok gear drinking Pepsi and commenting how it's sad when people sell themselves out. Ok, I'm not against someone making money playing games or whatever but I don't see a passion there. Just Playing popular thing to get money. Everyone is trying to be some fake persona. Not all are like this but it seems to be the majority and it's ruined Twitch for me. I just don't feel like sifting through 8 gajillion Minecraft and LoL stuff on Roku to find anything I want, I rather just go to pre-recorded videos on YouTube at this point.

It seems to me that companies saw Twitch as a cheap source of advertising and started dishing out early access or free codes to prominent but also pliable streamers. I saw this with Battlefront 2 recently with a bunch of streamers who were suspiciously averse to answering chat questions about the loot boxes and obvious performance issues but no problem praising the game's graphics and fan service.

Personally a stream I want to see is Bone playing Final Fantasy XIII. The screams will be real with that one.

I see it as feeling like playing a game with a buddy on a couch. You are watching and interacting (if they are a good streamer). Sometimes it is just to see if the game is good for you. A see it before you buy it. Games like monster Hunter world are benefiting from this greatly to introduce the game to players. Is it an amazing platform... no, but is it good in small doses, yes

- The new Zelda Breath of the Wild is a great open world but shockingly bad RPG,
- Final Fantasy looks amateur compared to Chrono Trigger or Panzer Dragoon Saga.
- Sonic is just an order of magnitude better than Mario
- Resident Evil 4 shouldn't be called Resident Evil
- Panzer Dragoon Saga is the best game of all time and the main reason more people don't agree is because they haven't played it

Panzer dragoon saga is a great game, I personally feel dragon force is the greatest strategy game of all time, and came out in the same short print run as saga. Both those games are criminally underappreciated and I would love to see a new dragon force and/or panzer game, I doubt it would ever happen though.
