To me, it doesn't get any better than Mortal Kombat II.

For nostalgia, it's Ultimate MK III.
To actually play, MKX. Mortal Kombat X is the best in the series when it comes to mechanics.

MK Trilogy was a fun party game I used to play with friends. MK2 is probably where the series was the most interesting, as many of the later additions are gimmicky, and the roster changes for MK3 were...not the best. But MK2 has some awful AI. The whole series is also really prone to cheese.

I have the most attachment to MKII. I always felt it had the best atmosphere as well.

I have or threw the digital game on as many systems as I could and enjoy it on everything (GB, GG, SNES, GEN, 32X, PS1, SAT, GC, PS2).
I really like Sub-Zero and his 2-part fatality. Baraka is always a blast too (choppy-choppy).
I've had some fun with MK3 and variants as well, but it was always to much combo and super cheapness to win my full approval.
