the issue I'm having with the bigger guardians has been that if you fuck up the timing of the parry it just pretty much breaks your shield quick. So like I said, I'm gonna need a better shield.

I think both cores are rare drops. You'll get them eventually.
I don't even think shield rating matters. In my specific case the shield I used before my demise was a 70 rated shield. It went from unused to shattered with one mistimed parry where the beam flew off to the left. Unless there's something I'm missing, me thinks those beams are calculated to insta-break any shield, even the most iconic shield in the game (which I refuse to us in general). It's lame.

which kind of sucks because it's not easy to "practice." If it helps, I'd argue it's more about getting a feel for distance than anything. If you're in an open area, I'd learn the timing at the distance the guardian normally stops to aim at you at. You know what doesn't help? Having half a dozen (or more) guardians targeting you at the same time. I won't ruin it but there are only two scenarios where it happens in the game that I've discovered.
I think for me, that's what messed with my timing in my particular case. Crap. The anxiety of dodging those targeting lasers while trying to break said lasers behind trees and rocks was just too much for my little heart to handle.
The music plays a factor. It ramps up when one spots me. Builds tension.

Upon reading this thread I began playing again. I was 20 hours in and did not go up against any divine beasts. Since then I sold a ton of "rocks" bought the stealth suit, stole a bunch of shock arrows, and am now inside Vah Ruta. It did take me forever to take down those damn ice blocks it shoots at you with my flame sword - timing that was harder than parrying a guardian. It wasn't until after I was inside that I got the grand idea of using
Noise, I have found keeping a weak shield, like a lid, in my inventory so that when I see a guardian I quickly switch to the weak shield and if my timing is right it works. Parrying works with any shield, not just the good ones. I figured this out during a thunder storm where I did not have a metal shield equipped.
Ok now a question for you BotW Vets:
What are some quick easy staple recipes?
I hate cooking or any crafting in games, so I rarely cook nor do I want to spend a ton of time cooking. Please share with me a couple staple recipes that will help me - IE one good one for filling my hearts, one for giving extra hearts, one for stealth, one for defense, etc...

In terms of usefulness, cooking a single 'hearty' item of anything is the most useful recipe in the game. Hearty radishes are the most common. For more potent effects, use multiple different ingredients with the same effect. Using a defence boosting fish, mushroom, vegetable and fruit together normally gives a better result than just using 4 of the same thing in terms of the size of the buff. I found using multiple of the same ingredient tended to result in the weaker buff, but for a longer duration. That's useful for the warming or cooling ingredients though, as you often only need one level of that to get by, so it's better to have a level one warming effect for 20 minutes than a level 3 one for 6.

For basic HP recovery/extra hearts, Hearty fruits/vegetables when cooked are solid. What I used (and a common recommendation ) is the Hearty Durian. Cooking just one will still give you a full restore plus several hearts, which is what I usually carried. That one spot next to Faron Tower has plenty to snag, so hitting that up and then cooking them will set you up on basic healing for a while. Or you can combine them for a ton of extra hearts, I guess, I didn't really do that.
