You can find rupees, but you'll probably get a lot more from selling stuff. Main thing you need a lot for is unlocking armor upgrade tiers, which is worth doing as you can. Stats in this game use relatively small numbers, so a few points more defense is actually pretty significant.
Meaning you have not yet played Mario Kart 8? That game is excellent as well, if you want a change of pace from Zelda.Switch. I never owned a Wii U. In fact, I only bought a Switch because I wanted a solid portable gaming device. This is the first game I've gotten for it, and I'm pretty sure I've made a good decision with this purchase haha.

The way I made money in the early goings was blowing up those shiny black looking rocks on the side and base of mountains/hills. They pop out gems and such that can be sold. Bombs are free so why not. I also killed everything that moved and sold all of the monster parts since I never used them to make elixirs. After dozens of hours I could never get on with mastering elixirs. Those monster part add up to a pretty penny, err umm, Rupee.
I stealthily got my way through a decent portion of the game. When powered up I was able to run faster so I would camp fire it up till night if I had places to go and people to see. Time is money aka Rupees.

I've only picked up Mario Kart 8 like twice, it's ok and all, but I detest online gaming so I have to be in the mood to push out one of the sets of courses. -- Also I'm part of the Blue Shell needs and on/off switch camp because I don't like my Mario Karting to really just be Mario Partying on wheels where random luck not skill (driving and gen item usage) wins the day.
Most my time was Zelda, and after that my imported I Am Setuna and Lego City Undercover which isn't done. Ultra SF2 is just a screw around title when I'm bored.
I need something new and DLC doesn't do it for me. Half tempted to start Zelda over, but that one save file thing sucks.

The best money-maker is to cook up meat. Cook up all the Raw and Prime meat you can (5 Prime/5 Raw and don't mix them with anything) and then sell that. You'll get 200+ rupees per dish if you do that. You won't be needing the excessive health benefits (5+ hearts) they offer at this point in the game anyway. And like isiolia said, you'll be wanting to keep the raw materials you collect for upgrading.

Thanks guys. I have all kinds of random crap I've found that I could sell too. I haven't experimented with any sort of crafting so I don't know what's worth keeping or selling. But whatever.
Another question: when I got my first four spirit orbs, I went for the extra heart. There was another option - something about vitality. My guess is that it made your stamina better for climbing/swimming/etc? My hunch is that going for more hearts is a better idea right now. Am I doing it wrong?
Actually, since you (didn't) ask, here's my short-list of Switch games I'm most interested in picking up:
Cave Story - Played this on PC years ago. Got to the final boss and never finished. I've been meaning to replay, and I like the look of this remake.
Mario Kart 8 - as mentioned above.
Minecraft - I own this on PC and Xbox One (and Rift if you want to count that as its own platform), and yet I still want this on Switch because when I was getting into it a while ago I kept thinking "damn, this would be a perfect portable game."
Puyo Puyo Tetris - I actually own this on Xbox One already, but - again - this would be a great portable game.
Spelunker (JPN) - I loved Spelunker when I was a kid. This looks really cool. (Not really related: I would go nuts if they released SpelunkY on the Switch).
Ultra Street Fighter II - This is a high want. I own Street Fighter II on all kinds of stuff. But I still want this.
And upcoming things...
Rocket League - I own on PC and Xbox. But again, it's a game I adore in portable form.
Mario Odyssey - I watched the trailer for this and had no idea what was even happening. Looks insane in a good way.

You are correct my friend. Actually the last MK I played was on 3DS. But fear not, MK8 is intended to be my second Switch purchase. I've got no right to say anything on Street Fighter because I am no expert on it, or any fighting game for that matter, but I did it hear it caught some flak for the switch version of the game. No clue if it's warranted so I'd look into to it even though it's a high want on your list.
Yeah hearts are the way to go in the early goings. Aim for at least 13 hearts for that special sword. After that I personally went max on stamina. That's two extra wheels at 5 pieces each. 40 orbs total. Ain't nobody got time to replenish stamina.

I made most of my money in Breath of the Wild by selling jewels I found exploring the mountains. I was being very thorough in my exploration and I tended to keep hold of at least some of them when selling, but I very rarely ran into money issues that way. I also haven't had too many issues with needing them for upgrades either.
I went for 3 hearts as my first few upgrades, then I went for a full wheel of stamina after that (5 upgrades). The stamina is more useful in the long run I think.

Hearts are good too - not just for getting hit, but as part of a quest later in the game.
That said, your'e always using stamina, even when playing perfectly. The vast majority of the times you lose hearts, it's preventable. Additionally, many HP recovery items are "Hearty" and add bonus hearts that you keep until you take damage. Since you freeze time when opening your inventory to use items, it kinda means you can keep your hearts buffed in fights when you need them.
At that very early stage though, more hearts are likely the way to go. Once you're comfortably not dying though, focusing more on stamina is probably the thing to do.

I actually took a different, more fun approach to rupee gathering. I didn't do any cooking for selling. Instead, I made my money exploring, doing quests and clearing enemy camps for money. Cooking for cash would be a dull grind and is not necessary in the least. Just do what feels natural and I assure you rupees will come the more you play. They are meant to feel rare at first. Money management is part of the experience.
P.S. want me to spoil the other ways you could go about wandering the colder climates of the plateau?
