Some of those games I forgot where they came out first. I don't have any games to add. I just wanted to say that I am stoked for xbox content to hit Racketboy.
I played a ton of great games on my original Xbox. I had the green Halo edition. It was the first console I bought as an adult. I just started law school when I got it and had plenty of free time. I have lot of great memories of this sytem and wish I still had it.

I think Oddworld: Munch's Oddysey needs to be on the list too. It was exclusive and launched with the system. I'm not sure if the NFL Fever series qualifies but it's worth considering. They were decent and certainly interesting on a historical level as they were developed by Microsoft and I believe they were the last first party NFL games.

Call of Duty
Psychonauts
Beyond Good & Evil
The latter two have been ported to HD, but weren't they Xbox exclusive?
Will second nominations on these:
Crimson Skies
Chronicles of Riddick
Half Life 2
Ninja Gaiden Black
Knight of the Republic
Dead or Alive Ultimate - or is there a better DoA title ?
I would say there are no sports games that belong on the list except Outlaw Golf (kidding). Their first party stuff was admirable, but not defining.

Beyond Good and Evil was totally multiplatform.
It's got a lot more exposure over the years, but I think it might still fall into the Hidden Gems category.
Psychonauts is kinda the same thing. Kinda a cult title. So not super hidden, but definitely not mainstream.

Here's my 2 cents about what's currently on 'the list':
And what about Stubbs the Zombie? Has anyone mentioned that? It's probably more of a gem, but I think it deserves mentioning.Definitive
Halo - In contrast to a lot of people using the PS2 as a 'sports machine,' I knew a ton of people who used it exclusively for this game. And if they had another game it was usually...
Splinter Cell - ...some form of this.
Dead or Alive Series - I think the definitive fighting series for the console.
Fable - Hyped beyond belief. Didn't live up to most people's expectations. Still a must have for the system, even just to try.
Knights of the Old Republic - THE RPG to get for the system. Basically the Xbox's equivalent of Final Fantasy (of the wrpg variety).
Jade Empire - The other lauded RPG of the console. Not so much talked about today, I don't think.
Ninja Gaiden - THE action games to get for the Xbox.
Jet Set Radio Future - The 'Sega is working closely with Microsoft, so come forth all ye Dreamcast fans!' battle flag.
Project Gotham Series/Forza Motorsport - These are toss-ups for me.
Iffy/Honorable Mentions
Conker: Live & Reloaded - Remembered, but often heavily criticized for the censorship it also received upon release.
Steel Battalion - It's certainly legendary among console aficionados, but mostly for the crazy-ass controller. I kinda feel like it should have its own category.
Sega GT 2002 - Yes, it was part of a pack-in title. But I think Forza and Gotham overshadow it.
MechAssault - Notable for being the first game to utilize the Live service, but seems almost forgotten today.
Midtown Madness 3 - Never heard of this one. Looks like fun, but I think the majority of Xbox owners focused more on the 'realistic' racers.
Oddworld - True, its and Xbox exclusive, but it received mediocre reviews and is pretty much forgotten in favor of Stranger's Wrath.
I think the below is a good category to have, since part of the console's appeal were the good PC ports. If I may, I'd even like to add Syberia to the list, to add a little diversity.
