I'm at 97 shrines, found all the memories, and I've been exploring the castle and doing a few of the sidequests. Want to finish the town one at least as it seems pretty cool.

Just sell your gems, or go on hunting expeditions into the great white north west. Each hunting trip nets a good bit of money. Use the bomb for everything but Rhinos, they need a headshot with the bow. Cook the meet, 5x of the same type, then go sell it. Three rhinos will net you $500ish on Prime alone. It took me two hunting trips to get enough money (I ran out of arrows on the first trip). And yes there are a few guardians up there.

I spent my limited time with the game last night completing a few more shrines, exploring the Lake Hylia region, and taming horses. I eventually caught a dark brown horse with good stats...and I named her Brownies. So, now, I have two horses...Cocoa and Brownies.

Oh, yeah, I sold a bunch of stuff to get the cash, including cooking five of the meats that I had. Also sold off some of the easier-to-obtain Ancient stuff that I got from taking down the Guardians, and some of my Opals and Ambers, among other things. Still stings to lose 10,000 rupees at once.
Thing is, I barely use horses at all in this game. There's too much stuff off the beaten path to make them very effective. That's another thing they should have changed for the game: you should totally be able to have your horse warp with you. I mean, c'mon, Link can warp at any time, so it doesn't require a lot of suspension of disbelief that he could warp the horse, too.
You probably already know this, but you can get Epona if you've got the Link amiibo, and you can also get a royal stallion that has excellent stats as well. Like most said, the Rito dungeon was indeed very easy... but I loved it. I wonder if it was accurately rendering the world around it as it flew around. It had a cool atmosphere to it.
Maybe others knocking on the difficulty about this one were also going on about the fact that there was like no buildup whatsoever. When you find the Rito village, you can be at the dungeon in like 10 minutes if you book it and already have some warm gear. In comparison I loved how long the trek was to get to Zora's domain, and it was actually quite challenging at times with all the electrical enemies along the path and the constant rain forced you to stick to the main path for that portion. And then the Goron canon mountain climb for that dungeon was pretty cool. But the Rito one... there was no task to get to the actual dungeon, so that's what I find a little disappointing about it. But the actual dungeon itself was really cool, even if it was easy.

I agree with that the Zora was the worst, Goron wasn't much nicer but it middled as did the Gerudo, but the Rito was the fastest of the lot and easiest. The thing is you got to kind of look at the whole part from POP it appears on screen the quest is given, to getting the heart container as the entire 'dungeon' experience. The stages are really in that respect fairly challenging and quite large outside of the Rito, almost like it was intended as the easier/first one if you happened to stumble on it then.
Also I am fairly certain it does render the ground when you're flying about, but it does it much like when you get ultra high anyway elsewhere where it's there, but hazy/blurry a bit as you can only make out so much from really high up. If it wouldn't as you skydive down eventually go NOPE and zip you back up with a heart subtracted it probably would render even more yet.
