One of mine near the top would be Legacy of Kain: Dead Sun.

The Blood Omen and Soul Reaver games were some of my favorite of the 5th and 6th gen and this one seemed like a return to form. The world of Nosgoth is extremely rich thanks in large part to the writing of Amy Hennig (of Uncharted fame).
Dead Sun was really far a long too as evidenced by this gameplay video:
Instead what we got was some sort of weird multiplayer thing called Nosgoth, which was aborted while still in beta.

Hard to say, really. I'm trying to think of a really intriguing JRPG that was never released...
What's awesome is that tons of (previously) unfinished/unreleased Atari/Intellivision/ColecoVision games are now available via AtariAge. Anyone else into that shiz?

One recent title that I really would have like to play is Prey 2. Teaser looked really awesome and I really liked the original prey. Pretty sure it's dead at this point though and even if someone revived it and continued development it would probably just be a mess now

Without a doubt, Earthbound 64:

This is sort of a unique answer, because Earthbound 64 was in development for Nintendo 64, canceled, and then ported to GBA, ultimately being released in 2006. It was a phenomenal game that, imo, lived up to the original.
However, it still pains me that we never saw a Nintendo 64 version of it. It was so unique seeing Mario (Mario 64) and Zelda (Ocarina of Time) in 3D for the first time. Both of those games are amazing. I think Earthbound 64 would've followed suit and been an incredible experience in 3D as well.
Again, it's weird to complain, because the GBA version was awesome... I just think a 3D, N64 version would've had an added touch of charm on top of it.

My personal white whale is the Wing Commander 2 SNES port. It was finished and even got reviews in EGM and GamePro, but none of those prototypes or review copies have ever surfaced. It was canned when EA decided it wouldn't be worth the cost of producing the cartridges.

With Gunstar on that. I've dug into that off and on over the years hoping it would pop up. WC2 is my favorite as well, even as much as I like Star Wars it quality of story/ships just edges it out with that game. Always been disappointed knowing it has been finished and buried hard core, much like SimCity NES which NP mag before it died handing it off to Future cockteased on some article with an image of the cart to spite fans.
WC isn't awful but it's not fair to call it great either up against the PC release on SNES, but this one had the feel of it should have and could have been bleeding excellence.

I had a lot of trouble thinking of something for this thread, but yeah, I gotta agree with you there. Aside from that, I guess I'd love to play whatever Banjo-Threeie was going to be before it got turned into Nuts & Bolts. I just have a hard time believing all of those assets and level designs were originally intended for a car-building game :/
