HD "remasters" before HD remasters! ...
Would love if we could come up with a list of stuff from the Saturn, PSX, and N64 era that made its way on the DC, GC, PS2, and Xbox. I'm sure the DC has a handful of titles since it was kind of a transitional console. Maybe weigh in on some thoughts if the higher end versions are worthwhile or not.
San Francisco Rush 2049 - is one that was released on the N64 and DC. This is also available on Midway Arcade Treasures vol.03 on the PS2 (along with Rush The Rock Edition, though the sound emulation is atrocious).
Resident Evil 2 and 3 - were put on the DC. Probably not as substantial as some other ports, but I think they have higher resolutions and maybe some additional content. I also see that Dino Crisis and Alone in the Dark 4 New Nightmare got DC releases.
WinBack: Covert Operations - originally released on the N64, got a PS2 release. I absolutely loved this game back on the N64, but it looks liked it's aged beyond horribly haha, I plan to get the PS2 version sometime.

DC is too modern. You're looking for SNES games that got Playstation ports, like Ogre Battle and Tactics Ogre. And those godawful Final Fantasy ports with the billion second load times.

Well if you're talking 1st 3D gen systems to the next -- N64 Midway put out Hydro Thunder, Gauntlet Legends, and Ready 2 Rumble Boxing 1 and Round 2 in upgraded arcade like form on the Dreamcast and some elsewhere (like Gauntlet to the Cube with the Legacy add-on stages.) Much of this also hit the PS1 but was roundly panned for having some severe problems with frame rate, crappy camera, and other junk as it just couldn't handle it. The N64 releases though, especially if the 4MB pack was in there really kind of shined to where it was almost a surprise it was that nice on N64. I don't have R2R Boxing anymore, may again some day if I bump into it super cheap, but I do have Hydro Thunder and Gauntlet and they're a pleasure. I actually ditched the GC Gauntlet for the use of the N64 title since the boosted copy of the game is an unbalanced hot mess on any system.
Why? Midway didn't set the stages up right, they're all out of order staggering the old and new together. It's so bad even the old stages are in the wrong order on their own so the game has some horrible balancing problems where it's very hard early on, then a breeze, then hard again...it yo-yos so bad it sucks. Sure it looks and sounds nicer, runs about the same otherwise but is quite not enjoyable compared to the original.

Having both ports and having played a friend's copy of the PSX originals, I can tell you that there's no real visual difference between the original and the DC/GCN ports of Resident Evil 2 and 3. At least nothing that I could tell.

I've been around them too, you're pretty much right. They did nothing to make improvements to the Cube copies that it was a burn to the fans, but most overlooked it because they were laughing they got it and Sony didn't for once (a rarity.)

In youtube videos the character models at least look a little better to me, but yeah. Not worthwhile. Totally forgot about those GC ports. My roommate suckered into them thinking they were actual remakes like REmake and paid the overprice point for RE2-3. Ouch.
