I have the following consoles set up in my living room:

Retron5 - covering NES, SNES, Mega Drive, Master System games
Wii U - Covering Wii U & Wii games
Gamecube
N64
Saturn
Dreamcast
PS2 - Covering PS2 & PS1 games
PS4
XBox 360
PC Engine Duo

The PC Engine is unfortunately on the floor right now, I ran out of room.

That covered about 99% of my console game collection in terms of playability. The only ones I need to dig out to play are my original XBox, 3DO and Turbografx, between which I own about 8 games worth playing, so no big deal.

I'd love to be able to set more up though, including my old consoles. Space is an issue right now.

That's how mine are. I've got probably two dozen other consoles that I only hook up when I want to play.

Hmm... currently hooked up (not always on the power supplies, though...):

Sony 32" CRT: NES, SNES
Gateway 23" monitor through TV Box 1440: XBOX, GC, 3DO, Saturn, Dreamcast
Sony Bravia 32": PS2, 360, PS3, PS4, Wii, Wii U

The rest of my stuff is stashed away in the closet, but easy to access. I hook them up whenever I want to play them. The NES is out for that very reason, and the SNES has been out ever since I got the SD2SNES. I've also got spare systems stashed all over the place. :P

I don't hook a lot up to the CRT at once right now, mainly because it's the main satellite TV currently. When I buy a new TV (probably relatively soon), the Bravia will go up front for that, and I'll find a place to lug the CRT for retro stuff.

I think I might set up my Genesis / Sega CD up sometime. I've been getting a hankering to see what it looks like on the big CRT with component cables (I've got a SCART-Component converter I got specifically to experience Pier Solar).

Most of my consoles aren't hooked up unless I'm playing them.

My HDTV, I have my PS3, Wii, Wii U, PS2, SNES and N64 (as well as some other stuff like a cable box and BD player) hooked up at all times. I use an XRGB for the SNES, N64 and Wii, and I have an AVR with enough HDMI inputs for everything else so I don't have to mess around with switches.

In the man cave, where I have my CRT, I have a ton of consoles on shelves, but I only hook them up when I'm actually playing them. I'm not about to mess with the cabling and switches to hook up ~12 console simultaneously. I just plug everything into the TV's front AV inputs, and I have an easy to access surge protector by the TV to plug everything into.

Cute.

Ive got seven, not counting the cabs... 4 Crts right now, three 27inches and one 12inch PVM. Three flat panels. All currently running pcs.

Ah, a pissing contest, eh? I've got 4 CRTs and 2 HDTVs, and that's only after I got rid of some CRTs. Though admittedly, only one of each is hooked up.
