You know, I was starting to consider picking up King's Field at some point based on your recommendations, but then you said CV2 is in your top 5 and you got bored with CV3, so clearly your opinion on things is wrong in every way.

Wait... is there a "bad" Castlevania?
(Haunted Castle doesn't even count IMO :P)

Yes. Simon's Quest. I despise that game purely (well, at least mostly) for the hours wasted by the damn night and day transitions.

Now that I think about it, the only Castlevanias I ever bothered to beat were these:

Super Castlevania IV
Castlevania: Dracula X
Castlevania: Symphony of the Night
Castlevania (N64)
Castlevania: Circle of the Moon
Castlevania: Lament of Innocence
Castlevania: Curse of Darkness
Castlevania: Lords of Shadow

Also, if they count, the two Kid Dracula games.
I... think that's it. Which is most of them. And honestly, other than Judgment, all of them are good to great, unless you want to quibble about the N64 one. For me, I love the NES games, and the best "traditional" Castlevania is usually considered to be Rondo. I think it's a tad too easy, but it is excellent. I still need to beat the other two Game Boy games. And since it doesn't have the "Castlevania" moniker, I can ignore that Haunted Castle exists.
