This is pretty hard to answer, but you can't go wrong with the Mega Drive entries. Anyways, I'm just listening to the Saturn Sonic 3D Blast soundtrack wondering why such a fantastic soundtrack is tied to such a mediocre game. I think the same guy ended up doing some music for Mass Effect and Sonic Racing Transformed.

Shinobi 3 is the most nostalgic inducing Genesis game to me. Puts me right back in Tennessee on a military base home with my two good friends Doug and Kenny, who were into X-Men which my parents didn't allow me to get into because they were extreme Christians and evolution is evil. I got Donkey Kong Country here, but everyone had the Genesis. Knocked out my two front teeth from some kid ramming me with his big wheel, and failed to learn to how ride a bike which made me put it off for several more years (for some reason my friends and I thought it would be a good idea to go down a big grassy hill, I just fell off and got hurt).
