Lol, that would be fun! I'd be happy to explain any of that midi stuff. The tools are a little dated, but I can provide them with some instruction.

To be honest, I think recording from audio out would be the best option if you want the music to sound identical to how it is when you're playing the game on the actual hardware (if you use Audacity on your computer through Line-In, you could also utilize the noise cancellation feature. It works well)

Ripping commands to the APU is great, but it'll be sent to an emulated chip, which may or may not replicate all sounds the same. A lot of times, it's good enough, but sometimes, it gives results that sound completely different.
