Games like Strider and Shadow of the Ninja
I have, yet again, been on a Shadow of the Ninja kick (Kage in Japan, Blue Shadow in Europe). I love this game so much, and player mobility is one of the reasons I like the it. You can grab the underside of platforms and flip up, much like Strider. What are some other games that allow grabbing ceilings and platforms and climbing walls Strider style? Are there any modern retro platformers that use this mechanic?

Ninja Gaiden III, though you can't grab onto every single ceiling.

Ninja Gaiden Shadow started life as a Shadow of the Ninja game and so has a lot of similarities, including the ceiling grabbing mechanics.
Ninja Gaiden for Game Gear has the attacking whilst mobile thing and you can also climb walls. It's not very good though.

Shhinobi III allows you to grab ropes/pipes/ceilings and move about hand over hand.
There are some X-Men games where Wolverine or Nightcrawler can climb across walls/ceilings(2 on the Genesis comes to mind).

Shinobi (3DS) plays a lot like Strider too (and, IMO, is the best game in the Shinobi series).

It’s awesome. I loved it, and I hope you like it too.
If you want to go way back, you could try the Legend of Kage, which basically invented the gameplay style described above. That game is pretty bad, though. The NDS-exclusive sequel, Legend of Kage 2, is totally awesome, however, and I think it’s exactly what you’re looking for. Like Shinobi (3DS), I highly recommend that game.

I played Legend of Kage. No good. After reading about 3DS Shinobi, it might be just a touch more hardcore than I'm interested in of late.

Try the sequel! Legend of Kage 2 is really solid.
Also, Shinobi (3DS) really isn’t that hard. If you can beat Shadow of the Ninja or Strider, I think you can handle it easily.
