I will start.

Platformer-Super Mario World and Super Mario 64. I feel SMW is just perfection. SM64 is more nostalgia. I started with the first on NES and SMB in arcades.

RPG-lol ok I have so many RPGs I love that this list would be almost endless. No matter what I write I would be leaving a bunch out. So will name some of my faves. Ys I-II Chronicles fave game ever. Xenoblade Chronicles X. Guardian Heroes,Dragon's Crown,Dungeon's & Dragons Arcade. (yeah also can be classified as a brawler but to me they are side scrolling RPGs as well) Grandia II and boat loads more.

Brawler-TMNT Arcade,X-Men Arcade,Captain Commando,Streets of Rage,Final Fight,Golden Axe,Ninja Warriors.

Fighting-Guilty Gear,Street Fighter II..just about any 90s Capcom and SNK fighter and most SEGA 90s fighting games. Outlaws of the Lost Dynasty.

Shmups-MUSHA,Gaiares,Raiden games,Cave games in general,Astebreed.

Run n Guns-Assault Suit anything,Contra NES games and Contra III,Ranger X.

Character Action-Bayonetta 2,Metal Gear Rising,Strider 2,Strider 214,Ninja Gaiden II,Ninja Gaiden 3 RE(yup)

Third Person Shooter-VanQuish,Binary Domain,Earth Defense Force 4.1.

FPS-Turok,Turok 2,Wolfenstien 3D,Serious Sam

Will save the rest for later. Also people debate these so much I will just say whatever you classify Shenmue and Yakuza..they are some of my faves in that genre.

I think we need a little specificity, so I'm going to say we do top 3 and one per series. I'm also not entirely sure what you mean by "character action," so I'm just going to leave that out.
