With one, Pacman VS is a must. But there is a fairly good list on Wikipeida:

Most that use it for "support" are usually maps, stats, or a downloadable game of some kind. Though I do recommend Windwaker and Rebel Strike.

In the case of Zelda Wind Waker, what is the GBA used for? I couldn't find any information on how it is used in the game.

If you find Tingle in a prison on the Windmill island, you can use what is called the Tingle Tracker. Where you can buy powerups, have bombs dropped, and use the screen for a map if I am not mistaken. I had fun with it when I discovered the running in the air ability. Can you say shortcut?

I recently picked up a couple GBA and GC-GBA cables too, and have gone through a couple of games that use them. The only really good use of the cables that I've found so far would be:

Animal Crossing - Visit the island; take a pattern designer with you and upload your creations later; e-reader cards can be neat if you can find any.
Pac-Man Vs - Great party game if you have four people!
Zelda: Wind Waker - Using Tingle is actually pretty cool. Still a small novelty, but worth trying.

There are two other games that I recommend, but only if you have several people (preferably four) each with their own GBA/cable:

Final Fantasy Crystal Chronicles - Not the best gameplay, but surprisingly fun if you get some friends willing to play along.
Zelda: Four Swords - Very fun game. Players are forced to work together, but are competing at the same time. Tied with Animal Crossing as the best reason to care about GBA-GC connectivity.

The good news is that you can often find the required parts cheap now. I paid $22 for two GBA systems w/cables, and then managed to track down two custom-built GameBoy Micro-GameCube cables for systems that I already owned - giving me four sets ready to use at a very reasonable price.

That is only recommended for people who KNOW they want to use the connections though, because otherwise it's a lot of money to pay for a small benefit.

The only way to play FFCC or Four Swords is five tvs, five gamecubes, four gameboy players, and free time.

I need to finish working on the article I started for racket on this cable. It was exactly what you are looking for: A description of what games use it and how. I am just missing about half the games that use it...
