One thing I have been meaning to try is a spinach artichoke flat bread there is a restaurant in town that makes them and they are simply amazing.

Spanakopita - Most recipes are shit. Don't use Ricotta cheese, just Feta. Most recipes also say to make it like you make lasagna where you layer Filo dough and the spinach cheese mixture ... fuck that. Wrap up about three or four sheets of Filo with the mixture into a triangle, where the mixture is completely covered, bake it in some butter. Much better (it's crispy everywhere)

Spinach (or Kale) Tacos with Fire Roasted Salsa
Salsa
Get a pound of tomatoes (big ones) - cut in half
An Onion - cut in half
Green Onions
Jalapeno - seeded
Garlic - 6 cloves
Cilantro - a shit ton

Grill all this stuff, sitting the cilantro and green onion ontop, until everything is pretty blackened on both sides (you can also broil in the oven)

Dump into food processor. Blend.

1 Tb Olive Oil
1 Tb Apple Cider Vinegar
1 Tb Lime Juice - fresh squeezed
Can of chipotle peppers in adobo - use at least 1Tb of Adobo sauce, as many chipotle peppers as you want blended.
1/4 ts Cumin
1/2 ts Oregano
Salt and Pepper

Mix that shit up.


Tacos
2 chicken breast (halves), skinless, boneless. Cut it into chunks of desired size.

Use about 1/4C of Olive Oil in a skillet (you can also grill the chicken if you have a grill pan) Season the chicken with salt and pepper (generously) cook it until it's pretty much done

Toss on sliced onion. Cook until they're less firm.

Toss on spinach or kale cook and mix until wilted.

It's done! (Easy)

Get some flour tortillas (or whatever) use the chicken mix, the salsa and some cojita cheese (or whatever) pretty damn delicious. You can also cook some corn on the grill and put that on too.

Nothing. I'm on a two week water fast, with one exception; Saint Patrick's Day (you don't want to not acknowledge a Saint).

I'm still cooking for my wife, but this is day four of the fast. The first day stunk. Had some headaches and couldn't sleep a wink. I'm back to my normal self though, besides the not eating thing. Maybe a little more clear headed actually.

I recommend a spinach stracciatella. It is very, very easy, very, very quick, and surprisingly delicious and filling.

Isn't it cheating to break it on St. Patty's? And if you're going to do that, might as well play technicalities for all it's worth and "give up" something that doesn't require effort.

No it's not cheating, I'm honoring a Saint.

I fast every year, sometimes for the entire month, except for Saint Patrick's Day. It's a tradition.

If you've ever fasted for an extended period of time, you might understand.


edit* and I'm not doing all of this simply for lent. Sometimes I'll fast when it's not lent, but lent is a good reminder for me to fast. Fasting for weeks on end is good for my body, good for my confidence, and gives me an excuse to eat someone's crappy cooking.

Fasting can teach you a great deal about yourself. There are certainly many benefits, imho. Outside of fasting for spiritual purposes (not lent) a water or juice fast can sort of reconfigure your body...realign things. Fresh juice fasting is also a great way to kick a cold faster. You're flushing your body with an abundance of vitamins and minerals which are rapidly absorbed. Your digestive system also gets a huge break. Digestion of whole foods takes crazy energy.
