I bought the first volume of Kai, but I'm still not sure if I enjoy it the same. I love some of those filler episodes. The guys taking their driving tests was HILLARIOUS! I look over at my shelf and I love the look of all the box sets next to each other.

Personally, I like being able to watch as far as the death of Raditz by the time I've finished the first disc. If you prefer it with the filler, it's not like they've stopped selling that version. 
Judging from Toriyama's updated ending for the anniversary edition of the manga, if there's a sequel, it will probably be about Buu. I don't think Toriyama really wants to continue the series though, and I respect that. It was already much longer than he intended.

They just cut filler material (but not all of it, like Gregory appearing in King Kai's planet). Nothing essential was cut.
The aspect ratio is 16:9, but even then, if you want you can watch the episodes in DVD in 4:3.
I'm curious to know what you count as changes.

In fact, there's a new Dragon Ball manga coming out, Dragon Ball SD. Oh, I don't know, about 2/3 of the series cut from it. That's all. Voice-over changes as well. The massive editing to make it seem less vulgar and less bloody REALLY bothers me. And it seems really silly, but, Mr. Popo is black. What the heck is wrong with a black character? Mr. Popo is black in the original as well. I don't know what you're talking about. If you're talking about the Funimation version, it's more neutered than the Japanese one. But even Funimation releases uncut DVDs with all the gore you want.
