Made blackened chicken sandwiches on sour dough with roasted red potatoes slices (aka fries) last night. Simple and delicious. They key is to use boneless and skinless thighs, cooked in a cast iron skillet while being weighted down.

Chicken thighs are great; it's like you have to try really hard to overcook them.

Still eating on less than twenty bucks a week.

Last night we had bean "burgers" with slaw and avocado. So very delicious.

"Burgers"

1 can black beans, 1 can kidney beans, rinsed and well drained
2 chipotle peppers, with a tad of adobo sauce
1 diced jalapeno, if you're feeling brave
1/4 cup diced bell pepper (color of your choice)
2 cloves garlic
between 1/4 cup to 1/2 cup AP flour

Preheat oven to 475 (scorching hot)

Throw that mess into a food processor, blend until it looks like a heavy mix of refried beans.

On a cookie sheet lined with wax paper, drizzle a bit of an oil of you choice (veggie oil is what I use). Form patties, place on paper, and cook for ten minutes. Flip and cook for another 5-10 minutes.

Bun or no bun, they're tasty.


Making a pizza from scratch tonight. Breaking the bank a little bit at $4, but it's worth every penny.

Should have taken pics of last night's pizza. So simple anyone (with a Kitchen Aid) could make it.


In a Kitchen aid equipped with a dough hook"

1.5 cups Bread Flour
One pack of rapid rise yeast
1 tsp salt
(dried herbs of your choice if you'd like)

mix

add a cup of warm water and 3 TBSP's of olive oil (I also add a TBSP of molasses or corn syrup)
mix in an additional cup of bread flour

mix until dough forms a clingy ball on the hook

place in a greased bowl, cover, let rise for at least a half hour

Sauce:

Tomato sauce, uncooked with herbs of your choice

Top with fresh mozzarella, cook in a 425 degree preheated oven. Check in around ten minutes and cook to your desired crispiness.

Simple, cheap, delicious.

Pasta Puttanesca tonight. Around $3.50 meal for two.

Pasta = $0.50
Diced tomatoes = $0.60
Onion = $0.50
Anchovies = $1.00
Olives = $1.00

The little lady came home early from work and surprised me by bringing Bojangles with her.

I fucking love Bojangles.

Last night I made homemade meatball subs with Italian sausage mixed in. Im looking forward to eating the leftovers for lunch. Gonna make chicken and rice for dinner. It is the fiance's favorite.
