Fatal Frame 2 actually sounds like an even bigger deal, with a first person mode, and a lot more additional content. The first game has aged a little roughly (replayed it just a few years back myself), but I still think 2 is incredible so that's one I definitely want to get on the Xbox now too. Someone's got the Xbox bug. 
If you have money for all of it go for it nice list, I would trim down and put more focus on the ones you really want first and then revisit to see if you want it all still.
I've owned, played all that jazz on your list and I know some of it is tempting but I can also tell your putting every possible game you might want too, since I do the same exact thing. Lol
I'd like to share my definitive collection with some opinion, but if you have any specific info on some games let me know!
Baldur's Gate Dark Alliance (1st ones a classic no need for the 2nd unless you absolute love it).
Castlevania Curse of Darkness, Many people haven't caught on yet that this is the closet your getting to a 3D SOTN. I love it but requires dedication.
Elder Scrolls Morrowing-Creating a character in this one gets me all the time and I love how it starts as well as the PC feel.
Gemma Onimusha- Especially if PS2 is not an option for you.
Gladius & Goblin Commander-Both games very under appreciated and recommended on any system.
GTA III, Vice City, San Andreas
Indigo Prophecy-Great for people who like unique games with excellent story telling.
Leisure Suit Larry MCL-Will always be my smutty guilty pleasure.
LOTR 3rd Age- Why Does no one mention this turn base RPG, I've loved it for years now.
MTG Battlegrounds- can't really recommend but suits my collection/taste.

Max Payne
Medal of Honor- Specifically Rising Sun & European Assualt.
Ninja Gaiden- Great game but unlocking 1,2,3 is what's clutch for me.
Obscure-Cult Classic and I like the all the B grade feel of it.

Pitfall Lost Expeditions- bought this for TR2016 has pitfall 1&2 as well.

Unreal Championship- right under TSFP for me.
Wrath Unleashed- strategy-tactical board game which I haven't had the time to dive into yet plus I need the manual to further understand but I haven't sold it yet may say something. Lol

How does the Xbox port of Onimusha stack up against the PS2 original? I've only played it on PS2, but I'm a big fan of the series, so I might pick it up for Xbox eventually if you guys recommend it.

Additionally, the inclusion of green souls adds a new dimension to the game. When five green souls are in the player's possession, the player can activate temporary invulnerability with a slow health recharge. Players frequently have to enter tug-of-war scenarios with the enemies over the possession of green souls; if a green soul is absorbed by a demon, the demon will gain new attacks and they will also see a dramatic increase in their defense. They will also release a greater number of souls upon death."
The part I underlined is what breaks the balancing of the game and ruined the Xbox version for me. I went back to the PS2 version and had a better time.

One of the best things about the Xbox is that even the rarest and most expensive games are not that rare or that expensive.
