Halo started this trend and since it became popular, every one started copying it. But the thing is that regenerating health makes sense in a game like Halo or System Shock 2 (psi talent IIRC) because there's a "scientific" explanation behind it while it makes no sense what so ever in a modern warfare game like Call of Duty.

I don't really mind it that much even though it can be pretty gimmicky. I find it acceptable in a death-match type game just because it adds a different type of strategy. You could argue that people camp spots with health items in older games like UT and Quake which amounts to the same thing as tucking away for a bit to regain your health. Left for Dead does a pretty good combo of having health items (adrenalin) that temporarily boost health and rare ones (health packs) that actually fix it.

Regenerating health is okay. Halo 1 actually has the right idea (health bar and regenerating shield).
I also liked Resistance 1's regen system. Your health was divided into four quarters. You could only regenerate up to the next quarter of the health bar.
edit: As far as CoD... If you go into Call of Duty expecting realism you'd be better off not playing.
Naturally you'd die from a single bullet; they have to keep the game going somehow.

The difference is that things like rocket jumping and double jumping elevate the gameplay while regenerating health does the opposite. I thought video games were supposed to be fun to play. Running away from the action so I can crouch in a bush for 5 seconds while the screen is all bloody and my character breathes heavily is not very fun to me. If the game was indeed trying to aim for realism and immersion like a more realistic military simulator type of FPS would then it wouldn't be a problem, but since my wounds just magically heal after taking cover for a few seconds it doesn't make any sense. People are using high powered weapons that A) have insane accuracy, B) are fully automatic with high fire-rates, and C) kill you in two hits. Normally, you're dead when someone has you in their sights.
I consider myself lucky if I survive a firefight and get to regenerate my health. That rarely happens though, given the hectic nature of the maps.

Regenerating health doesn't always mean running away from the action. It's often either finding cover while being fired at, or just being able to run to the next thing instead of resting or hunting for items. In any case, the design of the game is creating a bar for the particular encounter. Can you perform well enough to succeed with the amount of items and/or breathing room provided?
Given that CoD also magically generates enemies until you rush their spawn point (at least in some places), it's not exactly a realistic game in the first place. Health items are laughably ridiculous in their own right too, if the point is realism. If you want realistic, you'd get tired, a small injury would impair performance, and a larger one would mean your involvement in the mission (and the rest of the events depicted in the game) is probably over.
