The only people I've met used the term ness were younger than me and weren't playing video games when the nes was still having games made for it.
But sness? That is madness. It is pronounced super nintendo.

It was always n.e.s. or Nintendo, and Super Nintendo. No one said snes or super nes.

The point being made is how you would say them. Snes has always been the go to when writing. No one is going to say snes and if they did I would probably correct them or at least give them a strange look and say "What did you just say?" Followed by "Get the hell out of my house."
