I would say X then XII. I don't like one better than the other, in fact I enjoy them both. Very much in fact. I say X first though so you can see how the series evolved as the games came out. From menu based, ATB system to an almost MMORPG RTB system. Then you can go to XIII to see the evolution go a step further. Just my opinion, if you can play them in order, do play them in order.
As far as games in the series, favorite all time is IV (2 U.S). It was the reason I got a SNES in the first place. I don't even care about the butchered translation. It was bright, colorful, great storyline, epic battles, engaging battle system, and I was at the point in my life where I was all about anything AD&D, Tolkein, fantasy based fiction crap I could get my hands on and FF2 fit the bill. I still think it's one of the more epic scenes in gaming history when Cecil goes from Dark Knight to Paladin.
After that, I enjoy VI(3), V, I, VII, X, XII and Tactics....not really in any particular order.

So I'm playing X now and I have to say after playing the first blitzball tournament game I wanted to quit.
Sometimes side crap like blitzball ticks me off. I didn't mind side quests in the old FF games and didn't mind trying to defeat the "Weapons" in FF VII, but learning a game within a game is annoying. I want to play FF style role-playing not learn a new sport style role-play.
I am not going to give up, unless blitzball plays a large role in my game playing experience.
