Very cool video, brings back memories. I have been a diehard Flight Sim nut since the Commodore 64 days myself. I even bought the rare enhanced processor 4x speed up cart (still own) to play
Jet 2.0 at a decent frame rate. Loved the original
SubLogic Flight Simulator Scenery Disks, the Hawaiian disk had a hidden level inside the volcano.


Back in the day I was hooked on the Arcade Cabinet
Steel Talons. I discovered
LHX which I "flew" on my 486DX66; LHX is the closest Helo sim back then to match the arcade cab. Very sweet to discover the Osprey in the game.
Couple of obscure Flight Sims for DOS are
Merlin (British Navy Helo Sim) and a very neat Space Shuttle Landing Sim with pilot voice callouts
Precision Approach.
So true on the huge documents, part of the Kick of the earlier Flight Sims is the thick Pilot Manual with
Falcon 4.0 topping it off with huge a ring binder! Oooh, so many keys for adding to the simulation.

Microsoft Flight Simulator has soooo many add on planes and airports that can be downloaded from various sites. Fly the Wright Plane, Prototype Aircraft or even fictitious Star Trek ships and UFOs.
One game you should really checkout is
TFX by Ocean Software. This game is so "Top Gun" perfect even in the older VGA polygon graphics. The camera controls, the flak bouncing the aircraft and especially the killer music. There was a sequel titled EF2000, but no where near as good. Google TFX gameplay videos off YouTube, this game along with another of Ocean's greats; Space Sim
Inferno is worth getting up and running on DOSBox.
A very unique feature in TFX I have not seen done on modern Flight Sims is the virtual "lock target" <press F10 twice> mode. Your pilot view stays on Target even if behind until you bank the aircraft which then rolls to forward view until you level out for target view again. The roll of the view as you struggle to lock on is so well done between the blackout and redouts as you pitch to setup the AIM 9 missiles.
