Circle is definitely one of the tougher ones, but that comes out of nowhere. I even "power leveled" a bit near the end for fun with the card system and all, and I'm pretty sure he still killed me in two hits. It was insane. Felt amazing beating it and I loved it.

The final boss in CotM is actually ridiculously easy if you have the right cards, particularly the summons. They hit for massive damage, and the summon animation makes you invincible for the spell's duration. The first time I beat the game, I abused this heavily.

Also, and for the record, Dracula is in peak form in Castlevania III: Dracula's Curse. It is the only game where I have found him to be challenging. (He is overshadowed by the Grim Reaper in almost every other game.)

Aria of Sorrow is a fun game, and so is Dawn of Sorrow, but I really didn't like the protagonist either.

I dunno, CV3's Dracula is a free pass to his last form if you have Sypha, at which point the difficultly mostly comes in your committed jumps. I love the first game, and for some reason I love beating every version of it that I can get my hands on. I recently bought the Konami Collector's Series (Castlevania 1, 2, 3, Contra and Super C for PC) and can't wait for that to come in so I can beat that version too!
I like to play CV3's Dracula with only Trevor. Once you come up with a good system, it's not too hard. Same for CV1's Dracula. The only thing that gives me a hard time about CV1 is how long it takes to beat the first form.
