I never played Metal Gear Solid. I have MGS 3 for PS2 though (got in a lot). Is it better to play them in order or can I start with 3?
I think 3 is probably the best to start with.
It's a prequel, so you don't need to know any of the prior games' stories. It has arguably the best story and pacing of any MGS game. And if you like it enough then you'll have an easier time going back and playing MGS1 and 2, both of which have somewhat archaic controls compared to 3 or 4.
I feel old when talking to anyone my age yet too inexperienced to effectively talk to anyone older. Life is grand that way.

Oh. Just checked. I have 2, not 3. I'll probably pick up 3 first then.
EDIT: Was looking at the Metal Gear Solid games, and I'm completely confused. Whats the difference between Metal Gear and Metal Gear Solid? Whats the difference between MGS 3 Snake Eater and MGS 3 Subsistence?

Sorry I'm barging into this discussion, but I just want to recommend the following; play the MGS series in the order they got released.
Until 2 years ago I was a total MGS newbie myself. Just play all the games on PS2/PS3 or just PS3 (with the HD collection). This way you can see the development of the series and its gameplay and scope.
This way you don't have to jump around different control schemes for example. MGS1 plays differently from MGS3. When playing the games in order of release, the controls will evolve in a logical way. When first playing MGS3 and then going back to MGS1 will the control scheme will feel relatively constrained. You'll not have this the other way around.

But yeah, I feel exactly how you feel when it comes to playing through long franchises. Even if the games aren't connected, I love to see how the series has evolved through the years.
I'll probably just play them in order then, and do the same with final fantasy when I get into that.

I don't know if Frerix was already suggesting this, but I agree with the playing them in order idea and would further suggest that someone start at the very beginning with the MSX2 games (there are online translations available and they are included in MGS 3). I wish I had the opportunity to do this and can only imagine how incredible the progression from Metal Gear 2 to Metal Gear Solid would feel to someone fresh to it all, both gameplay and story/character wise.

I'll second what bruno says, and agree further about Final Fantasy as well.
