Martial Masters is probably the least known very good fighting game.
Garou is the best neo game period, nothing comes close, not even Last Blade 2

Wow someone else remembers One Must Fall. I played the shit out of that in the DOS days.

These have probably all been mentioned, except maybe Last Bronx and UFC, but my favorites in no particular order:

Power stone 1 and 2
Guilty gear series
Melty Blood (prob my fav. 2d fighter)
Waku Waku 7
Last Bronx (Fav fighter on the Saturn aside from the obvious ones)
UFC (Dreamcast)

Need FreeMCboot? I'll install it on your PS2 Memory Card for free if you cover postage both ways.
Consoles: I have too much stuff
Arcade: No seriously, I have too much stuff. Someone grab a shovel and dig me out of my basement.

Last Bronx is surprisingly good, if a bit plain. I don't understand why it flew to far under the radar. I'd love to see a sequel developed.

Way too many established franchises on the platform for anyone to take notice. You got your SF's and Your MK's not to mention its direct competitor VF series and FV as well as their crossover Fighters Megamix!
But I agree though, a very underapreciated fighter!

Lots of great ones mentioned, there's no way I could pick a favorite among them all. But I'll throw in mentions for Breakers Revenge and Yu Yu Hakusho: Makyo Toitsusen.

Breakers Revenge. In terms of gameplay it's one of the best fighters ever!
