The part (in the second room of 6-2, I think) where the birds are flying at you and the dude is tossing those sticks at you from a platform you have to jump to. Other than that ONE part, it's not so bad.
I really suck at the second form. The first form is easy. And from what I've seen in YouTube videos, the third form looks really easy. So I just need to not suck at the second form and I'll be able to beat this game.
Anyways, level 6 is to Ninja Gaiden as level 6 is to Castlevania, if you know what I mean. Much different styles of platforming, but the same kind of hardness for the last levels in comparison to the rest of those games.
I highly recommend grabbing the spin attack magic at the far right side of the bottom floor of level 6-3 and trying to beat the level in a single run with it (not that hard actually). It kills the 2nd form in 2 hits, which more than makes up for the lack of health recovery on him.

It does during the cutscene, but if you die on the boss, when you get back you'll start on whatever form you were on with whatever health and weapons you arrived with ebcause there is no cutscene this time.
If you beat form 2, you'll lose your weapon and get full health for form 3 though.

Ah, I just found that out. I played through level 6 again and got up to the boss and it started on the second form. I was like, "WTF!" Too bad I had the upward fire thing and not the spin attack thing.

For the bit you were stuck on in 6-2 aswell, using the spin slash for the jump lets you just jump right through the knives and eagles and stuff if you keep it that long (its found enar the jetpack ninjas). You can open candles by pressing down and slash in midair if you need more ninja pwoer, that way you slash normally and dont waste your magic by spinning.
If not, slowly moving toward the knife guy (but not close enough to spawn that eagle) makes him eventually move of screen and not come back for whatever reason, lettign you make the jump with just the eagle to deal with.
I had to play 6-2 like 5 times through last night, not even counting the many failed attempts. It became a bit of an art
AH-HA! I didn't know that you can press down in the air to not use the spin attack! Good to know! I have it at the end of the first stretch on 6-2 ( I need it for those damn flying scuba guys) but I lose it halfway through the second room. I haven't been able to determine which candle gives me that flame weapon, I'm too busy concentrating on not getting fucked up lol.
As for that one part I get stuck at, I usually have the star at that point. I just nail the guy on the platform with that but the bird fucks me up. I know what you mean though, if you just stand that the edge he disappears. Problem is, that bird right there really fucks me up good. I can time it perfectly so just as he spawns I jump and nail him, but it immediately respawns and launches at me. And that happens in an endless loop. the only way to break the loop is to take a hit. I don't know how I keep doing that, but it keeps happening.

If you jump and slash it pout of the air like you said, and then just bomb it to the right, jumping and slashing the soldier who comes at you you should reach the ladder before the bird catches up with you. He might hit you, but you'll be on a ladder and it'll just do 3 damage insteadof knocking you into a pit.
I too started playing this. 6-2 was the only real level that gave me issues. I didn't have an issue with the flying ninja's throwing the star. It's the last and infamous part that gave me trouble. I find you just have to take a few hits and make a run for it.
Overall I feel like this game is easier than Castlevania, because in Castlevania you couldn't take hits. You had to do it perfectly. Ninja Gaiden is definitely more about speed, and forces you to just take the hit and move, as a result I feel like most of the time I'm just running with no regard for whats hitting me.
