You should give The Magnificent Seven a watch, just for cross cultural interest. At the least, it's a useful point of reference for contrasting Eastern and Western styles.

I don't even like Japanese movies that much, honestly. I much prefer a TV show, because they have more time to really flesh out the story and do proper character development.
I'm surprised The Searchers has gotten so little mention so far! It's probably John Ford's most impressive film, staring John Wayne as a seriously troubled, somewhat insane hero. It's been a while since I've seen it, but I remember it having pretty subversive subtext.
It's tough for me to narrow down to one absolute favorite, so I'll mention some others: A Fistful of Dollars - my favorite of the "Man With No Name" trilogy (or "Dollars Trilogy") The Wild Bunch - a very interesting film that deals heavily with violence El Topo - a bizarre movie about a quest for enlightenment
