For now, I want to avoid any subtitle heavy movies, giant robots, any humor I won't get, and things that are overly Japanese. I want to ease into it, not jump in....
So I would recommend you be willing to watch subtitled anime. A lot of fantastic shows haven't been dubbed, and many of the dubbed ones can lose something in the dubbing (whether it's the VAs not hitting the right tone or elements of Japanese that don't exist in English).

Let's not rush him into things. We fans of anime and foreign film forget that it takes some getting used to before you develop the concentration and focus to keep up with subtitles

Hm, besides Bebop, I'd also recommend Trigun and Berserk.

Although I should warn you that Berserk has a batshit crazy plot and tons of gore (some rape). But it's in a western medieval setting so it'd probably feel more familiar. I'd still start with Bebop or Trigun though since Berserk can be hit or miss.

Oh and you might want to check out Lupin the 3rd, it's a little old but has some good movies and I think it holds up pretty well. Plus Cowboy Bebop drew some inspiration from that series

I'll agree with the others. Bebop is an excellent starting choice. There is a stand alone movie, so if you're not sure about starting the series you should start off with that. It's the perfect embodiment of the series, like one nice long episode.

Akira is also excellent and has a decent dub. You should also look into the Studio Ghibli films. Some of them might not be your cup of tea (Spirited Away pretty much screams 'overtly Japanese'), but they are excellent and were released over here by Disney, so they all have well directed voice casts.

The only other thing that I own that I can think of to recommend is Wolf's Rain, but... Hrm, it's been a while since I've watched the dub (I rewatched it with subs recently). I want to say the dub was pretty good, and....well a quick check and ANN gave it an A-, so I'm going to say my memory is right and go with good dub :D

I'll agree with others that stuff like Bebop, Trigun, and perhaps Gungrave, Black Lagoon, etc, might be a decent starting point.

I think it's fairly overrated myself, but it's silly to judge when you haven't even seen it.

Oh, no, please don't misunderstand. I'm not making any judgments on it. I'm just saying I genuinely have no idea why everyone says it's so good. I haven't checked it out yet because it's in a genre I don't frequent and because there's a lot of other anime out there to watch.

Oh. :o

Well give it a shot someday, maybe it'll surprise you. Heh.

It's not a popular opinion, but I was always kind of a bigger Trigun/Gungrave fan myself.

It's sort of like a really long, TV-friendly Quentin Tarantino movie, in space.
