The clerk at B's noticed my dog Ripley in the car and gave me a free pork shank and a nearly a PINT of the fatty bbq. Such nice people.

Ever walk into a cigar shop for only a few minutes and your clothes smell like tobacco all day? I was at B's for less than ten minutes and I may smell porkalicious all day long.

One of my favorite things about the joint is that they don't use mass produced meat (obviously as they always run out). No smithfield nonsense, it's all raised locally, so yeah pigs will be pigs and chickens will be chickens, but they aren't trapped or abused like they are in mass markets.

And the leanness of the pork is perfect. You could place it in the fridge for hours and you won't end up with a layer of fat anywhere. And probably the best part:

2 lbs. of BBQ
1 pint of Vinegar based sauce
1 pint of cole slaw
1 pork shank
1 (nearly) pint of bbq for my pup=
__________________________________

$19.00usd even.

That's close to what every craptastic pizza delivery charges after tax, delivery charge (seriously. What happened to free delivery?), and tip for a large pizza.

I feel like I'm ripping them off, but economies of scale works for me. Considering how good the food is, I would easily pay $10.00 a pound for their bbq. The pork itself probably costs them between $1 or $3 a pound, but the overhead costs must be a headache. It's obvious they know the business formula, so hats off to 'em.

Not eating it yet, I will be on Sunday, but I'm making pho this weekend. It'll be my 2nd time ever making it, but this time I'm actually going to be making my broth. Last time I used beef stock and it was disappointing.

Only bummer is that I'll have to wait until Sunday to make it since I'm making it for my bro/sis-in-laws to eat over a Lord of the Rings marathon.

I wanna get started already!

Don't use a rack at all. Instead, wash a few fresh stalks of celery, cross them like Lincoln logs and place the whole chicken on top of them. The celery does a few great things:

1) They soak up excess oil from the chicken
2) Soaking up the oil means no oil burns on your pan, making cleaning the pan much easier
3) Adds flavor to both the chicken, and if you choose to make gravy from the drippings, that too
4) You don't have to scrub a dirty rack

Had a slice of pizza for breakfast 3 hours ago. And just had a soy green tea latte. Now I'm at work.
