Fair enough, but keep in mind that while I grew up during the WW2 shooter age, that doesn't mean I was playing them when I was 8 haha. I just got into them around 2 years ago I'd say.

There are only three really influential FPS games with a WW2 setting in my honest opinion, those being the original CoD, Medal of Honor, and Wolfenstein 3D.
Anyways, as has been said before, the real kickstart for console FPS games came with Goldeneye, Perfect Dark, and later Halo. Before that, it was basically all PC ports or at least very traditional gameplay.

I didn't care for COD2. I did like the COD2 nod in the first Modern Warfare game. World at War is the best WW2 game in the series by any length, IMO.

I believe that while you are saying that games like Doom, Duke Nukem 3D, and Quake don't matter much to you, you are doing yourself a disservice by not seeking them out. They are exceptional games, even if they don't feature the WWII setting you enjoy. Plus, they are all grown out of Wolfenstein 3D, which we all know was a WWII game. The influence is there, even if it's not quite the same.
Anyway, WWII games don't receive the fanfare that they used to because modern warfare happens to be the "in" style at the moment. On consoles, sure, the change can be said to have started with Modern Warfare for Call of Duty, but I'd argue it began earlier than that, with the modern style of Battlefield 2 when compared to Battlefield: 1942, which really spawned out of a mod for 1942 called Desert Combat. A lot of ideas concerning modern warfare and locales made it to Battlefield 2. And with its success, and the success of its expansion, Special Forces, along with games like ARMA and the Project Reality mod...well, console FPS followed alongside its PC counterparts as versions for games like Call of Duty: Modern Warfare and Medal of Honor were released.
Admittedly at the time I remember people clamoring for the end of WWII FPS because they were tired of the theme after PC or console titles like Call of Duty, Medal of Honor, Battlefield 1942, Return to Castle Wolfenstein, Mortyr, Red Orchestra, Day of Defeat, Brothers in Arms, Hidden and Dangerous, World War II Combat, Sniper Elite, all of their expansions, sequels, or derivatives, and much more. There are some interesting gems in there, both on PC and console, for those of you who like to play them though. Pankakes, if you haven't tried it, I would suggest looking up Medal of Honor: Airborne. At times it feels overly sappy in terms of plot, but the paratrooper mechanics when entering each battle makes for a nice change to the traditional gameplay.
Oh, and for the record, there is a alternate history WWI FPS called Iron Storm. It's...not the best, though you might get some enjoyment out of it. I beat it but did not care much for it.

Oh I have played Doom and Duke Nukem 3D, as well as a tiny bit of Quake. They were all right, but I'm not a huge fan. I did really enjoy Marathon: Durandal though. I bought that when it came out on Xbox Live and it is a great game. After reading all of that all I know is I got a laugh out of the statement that having videos on youtube with a number of subscribers means you above all else know what you are talking about.
All the other talk about Quake, Doom and Half-Life not being influential makes me just want to play them right now to wash all that away.
