To be honest I think I've probably played the classic Sonic's (up to CD) and Megaman 1-6 more than anything else out there. When I was a kid I think Megaman was a bigger deal to me than Mario, haha, and the amount of times I've gone back to the Sonic's makes it hard for me to say if I like them more than classic Mario or not, tough call.
But I've replayed Super Metroid and Zelda LTTP seriously probably at least 20 times each or something too, maybe more with Super Metroid since I loved doing speedruns with it. Doom is another good one, it's an endless experience with all the megawads out there, but I still love running through the two main games as well. And Deus Ex is one I've gone back to several times as well, probably my favorite post-16bit era game.

Streets of Rage 1 and 2 - Complete them in 30 minutes but it's fun seeing if I can beat my score, or seeing if I can beat the two Blaze-clones without using all my lives.
Golden Axe - Again, complete in 30 minutes but it's so good.
Crazy Taxi - Can always play this for a few minutes and have fun.
Resident Evil 4 - Currently playing this for the millionth time, I love how much content is in the game, and challenging myself to play it differently once I've maxed all my guns out, trying to get 100% accuracy etc.
Pro Evolution Soccer 6 - This is like Resi 4 for me, one of those games that is endless. Although this is better in my opinion in that once you build your players up enough and start destroying teams, you can effectively create mini-games: trying to ensure a player gets 50 goals a season, trying to score atleast 5 goals every game, trying to get your goalkeeper in the top 10 goalscorers for the season. I'm not even sure if you can finish soccer games, I think the furthest I got was about the year 2025, does the game just completely regenerate made up players and young versions of the old players?
I don't know why but I've always enjoyed games where once you master it, you can still do stuff and because you are so powerful, it can STILL be fun. Pokemon was great until you realise you can't level up any further than 100. I like pushing a game and doing things that the game didn't want you to do, such as using the Chicago Typewriter in Resi 4 to literally one-shot kill a boss. Just the fact that a small bullet with 99 power can kill a massive beast, even by shooting it's tentacle or leg, makes me laugh. Although for some of course, this ruins a game. It has to be earnt though, just using a cheat cartridge and doing this, doesn't feel as satisfying.

Mega Man X on any all platforms that it is available on, and the same for Need for Speed Most Wanted. I own it and have played it on every system, and the 360 version is the definitive. Even better than the PC version due to aspect ratio issues.

I have never played symphony of the night but I'm really wanting to I can't seem to avoid it but I don't wanna download. I prefer Saturn import or play station which ever price is better

When I was younger, I replayed Ocarina of Time and Majora's Mask a ton. Like, back-to-back ton. I also replayed the Oracle games a lot too. I also played Mega Man X1 and 2 a lot as a kid.
Nowdays, the games I find myself replaying a lot are Ys I & II and Ys: The Oath in Felghana. I also enjoy playing Dragon Quest IV a whole lot, as it is my personal favorite in the series.

What are you waiting for? Run, don't walk, to your preferred method of buying and playing this game and start this instant. It wouldn't be so highly regarded, if it wasn't one of the best games ever.
For what it's worth, I prefer the PS1 version for the graphics. The Saturn has a few extra modes (that you'll probably never play) but it couldn't handle the transparencies and resolution that the PS1 version has. I just think that the PS1 version is the all around better looking and playing game. (you should be able to find it much cheaper than the Saturn version as well) If you have a PSP, you can get Castlevania Chronicles, it comes with Symphony of the Night. Or you can pop for the $10 or whatever it costs, on the PSN.
