MGS4 (If you like third-person shooters/stealth games that are very story heavy)
Valkyria Chronicles (If you like SJRPG's)
Demon's Souls looks good; as does MGS4. I'm not a big strategy-RPG'r though.
Those are all exclusives, are you interested in multiplatform titles?
I'll probably stick with exclusives for a while.

MGS4
Both Uncharteds
inFamous
COD4
The Sly Collection
Portal 2
The Orange Box (but only if you can't get either of the other versions)
I already own The Orange Box. Portal 2 looks good but I'm kinda holding out to see if they'll make an Orange Box 2. I'll have to look up some of those others.
3D Dot Heroes - Extremely Zelda like.
Catherine
Valkyria Chronicles
Little Big Planet 1 and 2 is loads of fun if you play with someone
Metal Gear Solid 4 - However, I haven't given it a play that it deserves
Uncharted 1 and 2 - I didn't like the first one and haven't played the 2nd one but it has gotten great reviews
Marvel vs. Capcom 3 - Better off waiting until Ultimate Marvel vs. Capcom 3
The New Studio Ghibli game coming out which is an exclusive
Shadow of the Colossus/Ico Collection
The Last Guardian
Probably some more I could have named but can't think off the top of my head atm.
Stupid Lead Free Solder
Thank OSHA all current consoles have this brittle solder. Bah! My son's PS3 died, the original Fat with the PS2 Emotion Chip inside. THIS WILL BE THE FOURTH TIME FOR A PS3 FAIL! Luckily the previous fails were still in service center warrenty.
He never plays PS2 games, a Fat PS2 with HDAvance/HDLoader is better anyways. The service center repair is out of the warrenty window. I can either send it in and cough up another repair fee or finally relent and get the Slim. I think the Sony Service Center has an exchange broken PS3 Fat and pay a cheaper then retail for a slim, may go that route.
Luck he can redownload all his purchases, although some have been taken off PSN.
Opa, if you like JRPGs, Star Ocean: The Last Hope International is worth looking into. It's not technically an exclusive, as there was a 360 release, but the PS3 International version is generally considered superior.
