I would think soul blade and tekken 3 have been surpassed by their sequels in soul calibur and tekken 5. Although I've only played tekken 3 and I think tekken 5 or tekken tag tournament are better.
Unholy War is an interesting choice. I remember playing it. It was a mix of turned based strategy where you moved a team of different characters on a tile-based board and then a real-time one-one fight in a 3d arena would ensue when one character advanced onto a tile occupied by the enemy. Different tiles had different terrain/arenas.
It was definitely an interesting idea that warrants a remake. I remember the fighting though somewhat limited was fun.
I also remember this I think third person tank shooter that used both analog sticks but I think there were other vehicle types and towers and stuff. It was I think more of a real time strategy or tactical shooter where but I could be wrong. Futuristic most likely. Thought it was interesting but can't remember the name of it. Although I'm sure it's probably been surpassed by other games.

PS1 is a weak point of mine but here are my recommendations.
Nightmare Creatures - Overshadowed by Resident Evil and Silent Hill but I love this game.
Wip3out - Best game of the franchise
Gran Turismo 2 - GT2 is my favourite I felt Forza outshines GT3 and GT4
