Also been having a lot of fun with Nekketsu Oyako on the Saturn (there's also a PS1 port)

I played Nekketsu Oyako for a while. Pretty fun game, but seemed slow paced to me.
I second the person who said mutation nation! The enemies were hilarious!

I've always been a fan of the CPS/2 final fight clones (The Punisher, Cadillacs and Dinosaurs, Knights of the Round, etc...)

Batman Returns on SNES is a fun beat-em-up that doesn't get much attention. Every fan of the genre should try it!

Beat em ups:
Shadow Force - From Technos(behind the Double Dragon and Nekketsu/Kunio-Kun games), who are no stranger to the genre, they turn it up a few notches here. 6 buttons, though 1 of them is the posses-your-enemies button, and another jump, you have high and low attacks(holding up and down), special attacks for each possessed enemy, and, well it's just a good beat em up.

Fighters:
Hippodrome - This isn't street fighter style, but it has your character, as a gladiator, taking on various monsters in an arena, and in between fights you can buy upgrades.

I've been trying to remember the name of this game for ages. Don't remember it being the best game for serious play, but all that over-the-top action was hilarious. Would love to play it again sometime!

These aren't nearly as obscure as some that have been mentioned but I loved Rival Schools and also Eternal Champions for Sega CD. I hear there was some balance problems with a handful of characters but didn't realize it in my youth. Fighting Vipers would probably be my main pick, although again not too obscure (fighters are my fav genre, but I play everything so I haven't delved very deep).

I'd like to give a shoutout to Samurai Showdown just because I think it was right up there with other 2D fighters at the time, it just doesn't have the legacy.

As far as beat-em ups I always liked Die Hard/Dynamite Dekka.

Thanks for the reccomendations! I hadn't heard of some of these. I'd like to reiterate durkada's mention of Panzer Bandit. It's a great game I only found out about last year.
