i've always enjoy the boss fight (Bowser) in Super Mario World.
also the final showdown with the dracula in Super Castlevania 4.

While they aren't terribly hard, I always loved the K.ROOL fights in the dkc series, maybe it's just the music but those things always seemed like a such a good closer.

Hmm. I really like Sigma from Mega Man X, and Kintaro/Shao Kahn from MK2, although I'm not sure if I've ever beaten Shao without spamming sweeps. Also wart from SMB2

One of my all time favorite boss fights is this one against Del Lago from Resident Evil 4. Epic, cinematic, well designed, this is just perfect in every way. The surprise quick time event at the end is a nice touch

I really liked the final boss fight from Metal Gear Solid 3. You had to utilize all of your gadgets and trickery to bring her down, and it was really exciting. Other than that, the winged desert serpent boss fight from Shadow of the Colossus was awesome, too.

I like that one too, the setting, the music, nicely done. Really fun taking her down with close quarters combat. I hated MGS 3 throughout a large portion of the game, but it gets really good towards the end. Most of my favorite boss fights are one on one fights, where it's just you and the other person, duking it out.
DMC3: Dante and Vergil final boss fight.
MGS3: Snake and The Boss final boss fight.
ZOE 2nd Runner: Jehuty vs Anubis final boss fight.
You get it, but if I were to choose one that hasn't been said yet, it would be Another Joe from Viewtiful Joe. It's just you and a guy who looks like you, fighting it out with almost the same powers, with some really fitting badass music.

I would have to agree with an earlier poster on Psycho Mantis... He pissed me off, then he read other Konami games from your memory card and you had to use the second controller port to beat him!!
What about the Ruby and Emerald Weapons from FFVII? I mean if you didn't nearly max your party out, you would get totally beasted!!!
