I know that graphically they're basically the same, as most multiplatform games are now. But what about the technical stuff like frame rate and such?
PC, always wins. Dragon's Dogma, PS3 wins. Why? Xbox 360 version has an extra disc for memory installation and better gameplay. PS3 is just once disc and has better hardware.
Okay. One disc is always good imo. But PC isn't really an option here. I'm not sure my computer could run those three games, but even if it could I'm quite low on hard drive space.

Rampage: World Tour (N64) vs. Rampage: World Tour (PS1)
and
Rampage 2: Universal Tour (N64) vs. Rampage: World Tour (PS1)

World Tour looks the same whether it is PS1 or N64. I've played it on PS1 and only seen it on N64. It's a matter of controller preference at this point. Either way, it is a spot on arcade port.

Universal Tour is pretty cool. Has like a billion levels though.
You get 3 new monsters to play as, but you can unlock the original 3 as well as some cool extra ones.
...which reminds me of the biggest advantage of the N64 version of World Tour over the Ps1 version; N64 very easily supports 3 player. I'm not sure if the Ps1 supports it or not, but even if it does, you'll have to buy a separate accessory.

Ooh, got it. Mickey's Wild Adventure (PS1) was probably the best port of Mickey Mania for, among other reasons, 32-bit graphics.

Return to castle wolfenstein PS2, Xbox or PC?
I have some old games having perfomance issues on my windows 7. I think the ps2 version got shorter levels or something like that?

PC version for sure. It should work fine on windows 7, it isn't that old of a game.
If PC isn't an option, than the Xbox version is probably better than the PS2 one.

PC is best. If there's any issues running it a google search should help you out. If you buy it on console definitely go for the oXbox version, which IIRC is exactly the same as the PC version except for not looking as good.

PC - It was originally designed for it and the multiplayer was addictive when I was a kid
Which means that no one probably plays it now....my favorite server was retired.
