I mentioned my wife and I doing a weekly cheese & beer pairing last week. Well this week we did Butterkase with St. Pauli Girl. Butterkase is German (literally meaning "butter cheese") and it's amazing. We had never tried it before. It's semi-soft and as the name implies, has a buttery flavor to it. I highly recommend it. I'll totally be buying it again myself. St. Pauli Girl is a bit of a hoppy favorite of mine. It's also German, which is why I decided to pair it to the Butterkase. A lot of people feel it tastes too skunky for their pallet. But I am a fan of hoppy beers, so it hits me just fine.

Not to burst your bubble or anything, but:
St. Pauli Girl is a "German" beer that isn't even sold in Germany, so it's actually more of an American beer that happens to be brewed in Germany. It's also basically a Beck's Light with a different label. And skunky does not equal hoppy. That skunky flavor isn't hops, it's the deterioration of the hops due to being kept in green bottles, which light penetrates and actually causes a chemical reaction in the beer which creates the smell.
But butterkase isn't bad at all.

doesn't burst anything. I don't care where it's from. Just saying I picked to pair it with German cheese, because it says "Germany" on the label.

This I think you are very wrong about. They taste miles apart. I actually think Beck's is horrible. But that's besides the point. They don't taste similar at all.

That's fine. It tastes good to me whatever it is.
But butterkase isn't bad at all.

Becks makes St Pauli Girl, and uses identical malt, hops, barley, and water. Now I can't say that it's a 100% match, but it is basically the exact same beer made by the same brewery, but packaged differently for marketing purposes (same with Miller lite and Milwaukee's best).

I get that, but they don't even taste similar. Seriously. Becks is super watery and St Pauli is very bold and a lot heavier. I mean maybe it's a matter of how much water goes into one recipe so that the ingredients take on more body. But they don't taste similar.

sure, but it's not needed. Ham doesn't taste like steak just because the pig came from the same farm as the cow. I tells ya the recipe is definitely different!

I don't think it's the amount of water added, but how long the hops/other ingredients are roasted for.

I don't think it's the amount of water added, but how long the hops/other ingredients are roasted for.
I'm sure there's a lot of variables. There's plenty of recipes out there that use the same ingredients, but amounts and what you do with them cause the outcome to be quite different.
A cake is made from eggs, flour and water but not every cake tastes the same. The recipe, and the person making the damn thing makes a difference to the outcome.
