@apple - I like to get my heat from multiple sources and multiple cooking methods. Primarily jalepenos and ancho chiles. The jalepeno is sa great pepper. Readily available, easy to work with, stays fresh for a long time and releases multiple levels of heat depending on what you do. I chop it, mince it and i'll roast it, skin it, and chop it - try out all 3 versions and see which heat and flavor you like best.

You wouldn't make it around my great uncle. He came up with habanero hellfires (or at least claims he did). A shot made of half habanero juice, half black jack, and most of the time he lights it. He likes to drink them still burning, but I wouldn't suggest it.

Thanks. It's not like it's Wisconsin out here, but the stars do seem a bit lower than usual. But I definitely prefer it to be pitch black outside when gazing. Such a fun hobby.
Apple: I can't tell you how many times in my life I have sliced a habanero, teared up, and wiped my face without thinking. It's the worst.
Plain yogurt can really help cool you down...but then you burp up hot and yogurt, so it is gross.
I'm with Mike on jalapenos. Not only do they add spice, they also bring flavor. Some peppers are just spicy. But jalapenos have a distinct flavor that brings more than just heat. They also smell delicious.

You only need a couple of drops to add taste and spiciness to your foods.
Personally, I don't like adding a bunch of jalapenos or crushed red peppers on my foods for many reasons. So I like using this Insanity Sauce.

I like really spicy foods sometimes, kinda depends on my mood and whether I'm feeling up to it.
There's other times when the last thing I want to eat is something spicy though.
