I really enjoyed Medievil which was a PS1 exclusive as I recall. It didn't do anything particularly new, but the level design, storyline and general game play were all well designed.

With the exception of YDKJ, which is on PC and Mac, the other quoted titles were available for Saturn, I believe, so they do not meet the Playstation exclusive standing.
