I find Documentaries fascinating - I watched a large portion of the ones already mentioned (acquiring some of the listed right now).
I dislike how many of them are skewed so far from the truth (Blood Sport excluded) but I guess it can't be helped. Here's some of my picks that weren't mentioned (fantasy ignored because they're interesting & including biographies):

50 Things to Eat Before You Die (BBC)
All in this Tea
Bigger Stronger Faster
Breakfast with Hunter S. Thompson
Catch Me If You Can
Cocaine Cowboys
Disney Studios - The Sweatbox
Dragon - The Bruce Lee Story
Ecstasy of Order - The Tetris Masters
Fearless
Food Inc.
Hackers 2 - Operation Takedown
Howard Stern - Private Parts
Midnight Express
Naica - Secrets of the Crystal Cave
Oh Canada - Our Bought and Sold Out Land
Ray
Sybil (1976)
Temple Grandin
Tetris - From Russia with Love
The Basketball Diaries
The Drug Years
The Interrupters - How to Stop a Riot
Wesley Willis - The Daddy of Rock & Roll
Winnebago Man

I have an already large list of them to watch, and can't wait to see more.

Lists are WORTHLESS without at least a description sentence.

Throw that same quote in for all the silly staged reality shows. Really? Some actually believe they are "real" documentaries?

Jiro Dreams of Sushi
I couldn't agree more. This was a movie that I had ZERO interest in seeing, but on a whim I loaded it up via netflix with the wife and lo and behold it was enthralling!
Seen the DVD displayed at the library and not a fan of reality shows of which I think this might be. Okay I just placed a reserve on it, see what its about.

Though not official documentaries, there are great stuff to be discovered on Special or Collectors Editions of various films. So much additional footage in the making of a movie. For example a the original Day The Earth Stood Still has a great reference for the Theremin instrument which was used in many 50s Sci Fi films. The Criterion released movies also have great making of footage.

Documentaries I have found so good I had to buy the DVD as a great reference. Well except for one listed below that I bough on a whim.

Planet Earth
Broken up in climates, great detail on huge varieties of anmals. Be sure to get BBCs David Attenborough's narration edition, Sigourney Weaver does not capture the mood as well.

From The Earth To The Moon
HBO Mini Series, okay its a partial reenactment but very well done.

John Adams
Another HBO mini series, still good stuff with all kinds of trivia history and has a special DVD feature of pop up text during the film.

Mail Call
A bit of staging, but great Military History stuff presented by "Gunny".

Moon Machines
Engineer's perspective, great technical stuff.

Shadow Of The Moon
Really looks into the hows and whys from astronaut's personal view. The Extras section also offers great insight such as Michael Collins description why the Astronauts were so to the point during radio communications with Houston.

Walking With The Dinosaurs
Lots of CGI, but how else to show dinosaurs? Love listening to Robert Bakker.

Who Killed The Electric Car
Look at how big corporations can monopolize the market.

Winged Migration - A close look of birds flight and the huge distances they travel. The Special Edition has extra making of shots in it. Really a beautiful documentary, you can really feel the power of the flight, probably as close as you can get to experiencing actually flying with feathers.

Baraka
Video Montage of beautiful shots thru out Earth, this really draws you in the best!

Koyaanisqatsi
This documentary SUCKS! Montage shots of Earth shown in fast forward. Are you kidding?

When We Left Earth
The Space Documentary that should be in everyone's collection. Though not as personal as Shadow Of The Moon, really impressive! The "Right Stuff" comes thru with the history footage and interviews. Makes one want to stand up when the heroes are interviewed.

Okay, thought people could use Google.
Shortened and revised list to what I think are truthful, not too biased, and I still enjoyed:

All in this Tea - the founder of the Silk Tea company talks about how he travels the world looking for the best farmers intersperced with teaching the Chinese government about organic farming. I try to visit the outlet on Vancouver island every year or so to get good tea.

Bigger Stronger Faster - I didn't know or understand about what Steroids really were before seeing this. It really puts Pumping Iron into perspective (tho it still doesn't explain the "I'm Cumming Everywhere" thing.

Breakfast with Hunter S. Thompson - All the dramatics that Hollywood put on his work are still totally valid, and after reading some of his works, it's amazing to hear the legend speak over breakfast. To see more of him being himself, check out the biography of Johnny Depp to see him explain his writing more dramatically. Also Check out the movie Where the Buffalo Roam for a better take on Fear and Loathing (IMO).

Cocaine Cowboys - How much is true? Dunno. Still, the people who are talking seem to be legit, and they talk fondly about the ones who died defending drug busts. Jan Hammer (Miami Vice) made some awesome Adlib music tracks for the film, not that it gives credence to it, but I thought it was a highlight.

Disney Studios - The Sweatbox - Filmed by Sting's wife during the production of what is now The Emperor's New Groove. Gets good 1/3 of the way through when the execs change everything and want to flush it.

Ecstasy of Order - The Tetris Masters - Getting ready for the 2010 Tetris championship. I can identify with some of these guys and the rest are interesting.

Fearless - My favorite of the bunch. I don't care how true it is, at least some of his quotes are in the script.

Food Inc. - A seed mafia documented, and a guy who is both superman and a farmer. I feel sorry for his kids, but he's definitely a superhero... Also, gross but true about your food.

Operation Takedown - More truthful than anything else I've seen about Hackers - a over-dramatization of Kevin Mitnick's hacking hobby.

Ugh... I'm tired of typing... and semantic trolls...
I also like BBC Life and shows about ants.

It had to be said.

My laugh out loud moment was someone classifying PRIVATE PARTS as a documentary.

I am not so sure about that...I provided links in my post to additional information, which I think is far more helpful than just writing, "This documentary is about caves, and it's awesome."

I don't like reality shows but enjoy documentaries that are staged.

Huh?
