I believe that extra part of the cable allows sending audio and composite video to another device.
If for some reason you need to.

The composite breakout box is also necessary for light guns.

Well I don't think I'll currently need either of those things so I'll just get the four cables listed before as long as there's no problem with them (if there is speak now before I purchase them).
N64/NES/FC/SNES/SFC/GB (SGB)/GBC (Black)(SGB)/FDS/Satellaview/Genesis/Mega Drive/Master System & maybe N64DD/GBC/GBA.

I'm currently getting a PS2 Component lead and a Wii Component lead, but I've been informed that RGB Scart cables are the same as the composite cables I'm currently using. Is that true?

Difficult to explain. RGB Scart often uses composite video as sync.
A smart enough TV could select between which image to process from cables who do that.

No. RGB is supposed to be a clean image.

Much closer to what these consoles render, than the lossy encoding of composite

Well, I'll go back to getting those SCART cables then.

(Also, a bit off topic, what's the best TV Out connection for a jailbroken iPod Touch 4G with Display Out?)

UPDATE!
I've received the cables and here are my findings.

PS1 SCART:
(Please note: Image may of changed over time so I don't know whether I broke the SCART cable or not)
Looks much more improved than composite. The colors are separated better and the image is sharper. The image still looks kind of grainy however, and those colours can be too bright and, if I'm not mistaken, bleed into each other.
I tried Mickey's Wild Adventure and the sprites come out kind of blurry, although it still looked refined and separated (but still could have that colour bleed problem). Hercules also looked less clear, refined and separated (colour-wise)

One thing I'd like to know is if I should be setting the TV's sharpness/colour to a certain level. Currently:

Picture Mode: Personal
Colour: 75
Sharpness: 75
Tint: 40 (Can't change)
Contrast: 50
Brightness: 50
Colour Temp: Normal
Noise Reduction: Off
(Only applies to SCART; Component is like this but has everything at 50 and Noise Reduction on Middle)

So that's better, but could still be improved. There's also the aspect of playing it on the PS2 and using something like GS Mode Selector, but I'd prefer it to be on the original PS1, except maybe if it looked considerably better.

PS2 Component: Absolutely wonderful. Set to the option that isn't RGB (Yr Gb Hr or something...) in the PS2 menu and set to 60HZ + Component on Jak 2 looked excellent, like actual HD quality. Metal Slug 3 set to 60HZ looks great and Sonic Gems Collection on Sonic CD looks great too. Both MS3 and SCD are clear, defined and colour-seperated. Even Atari Anthology looks fantastic as all of the pixels are clearly defined and the colours are the same and separated. Just have to hack the PS2 to run GS Mode Selector so all games can run at 480p/Progressive/60HZ. Currently the console has the old "Disc Read Error" problem though, so it can't run PS1 games. Doesn't get much better than this.

NGC SCART: Considerably better. The image still has a little SCART messiness but the GameBoy Player image is considerably more refined and clearer. Normal NGC games don't run at 60HZ but they still look quite clear, nearly as good as they do 60HZ on the Wii (More on that later). You could probably still improve it a little though, due to things like SCART messiness and no 60HZ.
Also, should I be using 4:3 or 16:9 on PS1 & NGC SCART?

Wii Component: Menu areas will still look a little less clear but when used on SSBB (and possibly forced to be 480p with NeoGamma) it looked very clear and separated. Rhythm Paradise: Beat the Beat also looks a lot better. And when used with GC games on 60HZ (in the case of SSBM with an image option in game turned off to make it look sharper and harder) they looked absolutely fantastic and high quality. Melee is separated down at the edges of the characters into pixels and all of the NGC 60HZ games just look really high quality and at a high resolution. Even the Game Gear games in Sonic Adventure DX look high quality, as the pixels are separated and distinguished fantastically. SBCG4AP on WiiWare doesn't look too bad either.However Virtual Console games (and even the NES games in Animal Crossing) do not support 480p/Progressive/Component and will not work, even when not set to 480p in the Wii menu. That is unless the game is N64 where it will look quite clear and crisp (even though the 2D parts don't look as clear or crisp at all). The Wii NES Emulator will work and look quite nice at 60HZ or 480p. I just wonder if you can force VC games to run in 480p as you would with the PS2's GS Mode Selector. I also wonder if forcing Wii & GC games to run at 480p in NeoGamma will work and with all games (and what settings you need to do so with). But otherwise, really nice, crisp and clear.
