You listed a bunch of LucasArts titles -- have you played LOOM? I'm going through it at the moment, and it's really enjoyable. It's got the visual style you're looking for, and the gameplay is unique from the usual verb + object affair. You have to cast spells ("drafts") which are each combinations for four musical notes, which cause different effects. The most interesting bit is that there are different difficulty settings: the easiest clearly spells out the notes of a draft on a musical staff for you, but the hardest makes you do it completely by ear!

I would also recommend The Last Express, which is now available on GOG.com. It's a 90s title by the creator of Prince of Persia, and it's... really suspenseful and awesome. It's got a very interesting visual style, with footage of actors rotoscoped for a Toulouse-Letrek kind of feel, and the team strove for historical accuracy in the setting (the Orient Express in 1914), recreating the dimensions of the train cars as exactly as possible and going so far as to employ what could have been an authentic schedule of stops during the game. There are really interesting elements to it, too -- your character can understand certain languages and not others, so you get subtitles when you eavesdrop on certain conversations but not on others. It also runs in real time, and every character is accounted for in a particular place at every moment.

Try LA Noire. It's an adventure game, yes.
