Yeah, well, I wouldn't be surprised if Nintendo has more updates for the Wii. Don't forget, the Wii U will be 100% compatible with the Wii. And Nintendo knows how many Wii consoles they have sold, I don't think they will completely abandon the console as soon as the Wii U is launched. They might not focus a lot of attention to the Wii, but we might see a few more updates for it. Whether those updates will be anything essential, that might be doubtful.

Softmoding the Wii has to be the best thing you can do for it, it gives you the ability to boot games from a hard drive which will prevent normal wear and tear to the optical drive thus preserving the console. This is why I boot games from a hard drive with my PS2, and I know CRT does this as well.

It's almost been two years since the last update.
I'll let that speak for itself.

It is not impossible that there will be another update with minor tweaks, perhaps a "let's perfect this before we abandon it" update. But like I said, I doubt there will be an update at this point with anything essential.

Could you point me in a direction to learn more about the best way of ripping me games to and booting from the hard drive?

Does modding the wii mess up the ability to play online or access the online store to buy stuff?

Nope and Nope. Wii still works as normal. I suggest waiting after a game has been released to see if it has an update that would disable the softmod.

So nintendo will not know the Wii is modded if I buy some wiiware games or redeem club nintendo coins. I'm thinking I may do this...
