I seem to remember at least one fighter that simply added a '2' at the end of it's name as a parody for how people thought Street Fighter II was the first game. Could have been this one.

Super Puzzle Fighter II did this.

There's a lot of weird fighting games if you dig deeply into the M.A.M.E. library. I used to do a youtube show called David vs. where I played a bunch of weird fighting games. I still have like 30 or so unreleased episodes. Sometimes you'll come across a really good one... like The Outfoxies. It's a 2d Super Smash Bros-esque game released in like 1994. It's amazing.
